Testa Dell'acqua can be explored through a variety of themes: the MAT focuses on the history of southeastern Sicily, while the Cava Testa dell’Acqua, with its karst landscape, Grotta Burritta and the “bberritta” spring, offers a geological and landscape perspective. Religious and agricultural customs, as well as a local food history, complete the picture. Culture and nature thus stand side by side as two distinct aspects of the place.

History from Multiple Perspectives

The MAT – Museo antropologico di Testa dell’Acqua is located in Testa Dell'acqua, a district of Contrada Mezzo Gregorio. It was founded to take a comprehensive new look at the history of southeastern Sicily. Anthropology, history, ecology and technology are the perspectives it brings together. This combination of themes focuses not only on historical events, but also on the relationship between people, the environment and technological change.

Another historical trace leads to Greek-Hellenistic farmsteads listed near Testa Dell'acqua in a Sicilian cultural heritage register. This listing adds another historical layer to the picture of the area. Together with the MAT’s broad approach, it shows that the history of southeastern Sicily can be viewed from a range of disciplinary and historical perspectives.

Customs and Local Cuisine

U Cummitu is a traditional rite held on May 1 in Testa Dell'acqua. It combines religious devotion with appreciation for the fruits of the land. Agriculture and tradition also feature prominently in the Feast of San Isidoro: the celebrations include a reenactment of traditional plowing and the traditional Gran GalĂ  degli Asini. The two occasions emphasize different aspects: one brings together religious ritual and harvest, the other plowing and the Gran GalĂ .

The cudduri di Sant’Isidoro tell a distinctive food story. These breads dedicated to Saint Isidore were prepared until 1957 by women from the Testa dell’Acqua district of Noto. They included small rings of unleavened bread and X- or S-shaped rolls decorated with a fork. The forms passed down through tradition give this history a tangible character.

Fresh ricotta takes center stage at the 2026 Sagra della Ricotta; the food stalls also offer filled panini and local wine. Alongside a named specialty, the festival brings together other foods and a local drink.

Cava, Spring and Karst

The route to the Cava Testa dell’Acqua follows the SP64 toward Testa Dell'acqua. 4.7 km after the junction, turn right onto an unpaved road; from the starting point, a well-marked trail continues. The directions thus distinguish the drive from the marked section that follows.

The small “bberritta” spring lies in the Cava. It flows year-round, although it carries less water during the dry months. Grotta Burritta is also located in the Cava Testa dell’Acqua. The landscape is characterized by a carbonate complex and a river valley, as well as surface and underground karst. The spring, grotto and karst offer different ways to experience this landscape.
